In this two (2) hour session, participants are educated on the “BIG 9” allergens that account for 90% of allergic reactions. The training session will include understanding allergens and how they are controlled:

• what responsibility the industry owes to the public in identifying the presence of these key offenders,
• what the difference is between cross-contact and cross-contamination,
• how industry leaders are customizing menu options to meet the changing needs of their customers, and
• best practices for implementing allergen awareness training programs that make it all work.
