of Federal Regulations 21 CFR 117 Subpart G, cGMP’s are the foundation for
production of safe and wholesome food. Often, we find cGMPs are not properly written
or are missing. They apply to all facilities
that manufacture, process, pack or hold FDA- regulated food and are the basis
for determining whether food products have been processed under sanitary
conditions.
In
this four (4) hour session, participants will understand and learn:
- What are GMPs and how
do they relate to various food facilities under the new Food Safety
Modernization Act?
- We will discuss what
the GMPs do and do not require.
- How to develop GMPs
covering Personnel, Plants and Grounds, Sanitary Operations, Sanitary
Facilities and Controls, Equipment and Utensils.
- We
will explore each section of the cGMPs by discussing Processes and
Controls, Warehousing and Distribution, Holding Human Food for Animal
Feed, Defect Action Levels, and will top it all off with Allergens and
Allergen Controls.
